Responsible for the overall successful operation of kitchen on a daily basis. Coordinate menu, procurement, staffing and food preparation for the hotel restaurant. Focus on continuous improvement of guest and colleague satisfaction. Supervise all kitchen areas to ensure high quality and consistency of production.

The Role:

1.Manages kitchen shift operations and ensures compliance with all Food & Beverage policies, standards and procedures

2. Estimates daily production needs on a weekly basis and communicates production needs to kitchen personnel daily

3.Assists Chinese Restaurant Executive Chef and Chef de Cuisine with all kitchen operations and preparation

3.Prepares and cooks foods of all types, either on a regular basis or for special residents or functions

4.Develops, designs, or creates new applications, ideas, relationships, systems, or products, including artistic contributions

5.Assists in determining how food should be presented and creates decorative food displays

6.Maintains purchasing, receiving and food storage standards

7.Ensures compliance with food handling and sanitation standards

8.Performs all duties of kitchen managers and colleagues as necessary

15.Leads shifts while personally preparing food items and executing requests based on required specifications
