一）菜品与菜单管理 1. 结合员工饮食偏好、季节变化及营养均衡原则，牵头制定周/月菜单，定期优化菜品结构，兼顾南北风味、素食及清淡餐等多元需求，确保菜品种类丰富、口味稳定。 2. 主导新菜品研发，定期组织团队开展创新尝试，收集员工反馈并迭代优化，每季度推出定量新菜品，持续提升用餐满意度。 3. 制定标准菜谱，明确食材用量、烹饪流程、口味及摆盘要求，规范出品标准，避免因操作差异导致口味波动。 （二）厨房运营管控 1. 统筹厨房日常工作，每日召开班前会，合理分配各岗位（砧板、炉灶、面点、洗消等）任务，调配人力，确保供餐高效有序。 2. 严格把控食材验收、储存、加工、烹饪全流程，执行“先进先出”原则，杜绝不合格食材入库，控制食材损耗，合理利用边角料，降低浪费。 3. 负责供餐现场管理，保障菜品按时、按量、保温供应，及时补充菜品避免断供，主动巡查用餐区收集反馈，快速响应合理诉求。 4. 督导餐后收尾工作，规范剩余菜品处理、厨房清洁消毒及设备归位，确保厨房环境整洁达标。 任职要求 1. 年龄28-45岁，身体健康，持有有效健康证，上海本地的为佳。 2. 学历不限，3年以上员工餐厅、单位食堂或餐饮行业厨房工作经验，3年以上厨师长管理经验，熟悉食堂运营模式及批量供餐流程。 3. 熟悉《食品安全法》及餐饮卫生规范，具备较强的食品安全管控意识和应急处理能力，能有效排查安全隐患。 4. 具备良好的成本控制意识和库存管理能力，熟练掌握食材采购、盘点及成本核算方法。 5. 拥有优秀的团队管理能力、沟通协调能力，能合理调配人力，激发团队积极性，高效推进跨部门协作。 6. 工作认真负责、吃苦耐劳，具备较强的抗压能力，服从管理，能适应食堂供餐时间安排（含早中晚餐及加班餐需求）。 7. 持有厨师等级证书者优先，有大型企业员工餐厅管理经验者优先。
