【岗位职责】 在厨师长的领导下，严格按照菜式规定烹制各种菜肴，保证出品质量。 ·协助厨师长检查验收购进货源的鲜活、质量、数量是否符合要求。 ·熟悉各种原材料的名称、产地、特点等，并随价格淡旺季，随时更换菜式。 ·服从厨师长的工作调配，合理分工、完成日常散客及筵席的起菜。 ·每天与前厅保持密切联系，随时掌握宾客对厨房出品的意见、建议。 ·熟练标准地烹制厨房研究制定的季节、月、周、日特色菜。 ·熟悉原料、配料、调料的使用，掌握各种烹饪技能，了解酸、甜、苦、辣、咸、鲜等特点及特性。 ·开餐前检查所用烹饪材料是否准备妥当燃料，调味料、小料用具、厨具等，并保持所有用具的清洁卫生。 ·餐后要根据要求进行各项收尾工作，特别是安全措施的落实。 【岗位要求】 1、为人正直，有责任心。 2、有3年厨房炉灶工作经验。 3、身体健康，能吃苦耐劳。
