1. 监督高效率和高生产率的厨房运作，确保在任何时候都始终如一的高标准的食物产品。 2. 负责监督厨房食品质量的准备。 3. 监测收货的食品质量和数量。 4. 同管事部协调员按照卫生标准共同管理好厨房、库房、冰箱的卫生。 5. 同行政总厨共同研究如何发展食品质量控制程序，保证按照成本和食品质量控制程序始终进行。

1.检查并确保餐前准备工作充分、适当，包括:各种汤料，各种调料及鱼翅、燕窝、辽参、鲍鱼等的加工情况; 2.检查各种菜品的原料切配、菜肴烹制的质量，严把所有食品原料质量关; 3.按照标准配方进行烹饪，对于不符合质量标准的原料、半成品与成品退回重做;并及时反馈相关部门，确保出品质量; 4.熟悉蒸、煲、炖、煨等食品的制作工艺，保证出品量。 5.熟知有关浸发干货工艺，熟练掌握干货浸发技能。确保较高的起货成率。 6.严格落实安全与卫生管理规定，检查所辖环境卫生员工个人卫生和仪容仪表，杜绝食品卫生安全隐患; 7.完成上级交办的其它工作，并及时回馈完成情况。

1.  专业技能与经验: 扎实的西餐烹饪功底:精通经典主流西餐菜系，熟悉现代西餐潮流。对各类高档食材（如牛排、海鲜、松露、鹅肝等）的特性、处理、烹饪有深入理解和娴熟技巧。 擅长西式热菜、西式烤肉档‘可独立完成摆台。 丰富厨房经验:在五星级酒店或高端西餐厅拥有3年以上实际烹饪操作经验。 副厨/主管经验:至少2-3年在大型/繁忙厨房担任副厨师长、主管厨师或类似管理岗位的经验，证明其领导潜力。 菜单知识:理解菜单设计原则，能协助主厨/行政总厨进行菜单研发、成本核算、标准化食谱制定。 食品安全与卫生:精通HACCP原则和当地食品安全法规，持有有效的食品安全管理员证书是基本要求。确保厨房操作符合最高卫生标准。 成本控制意识:具备强烈的成本意识，理解食材成本、人工成本，能在日常工作中协助控制浪费。

1.  协助工程总监制定本部门预防性维修保养计划有效保障酒店设备、设施安全完好； 2.  掌握当班能源消耗及维修费用，确保酒店最大限度的节能、节支； 3.  推行节能运行计划的实施和运行维修费用预算的控制； 4.  分析工程项目报价单，亲临现场检查施工与工程进度； 5.  做好消防、安全工作； 6.  建立完整的设备技术档案和维修档案。

湘菜头锅、川菜头锅、海南菜、粤菜 岗位职责： 1、 按照厨房服务标准、操作规程开展工作，确保厨房工作的正常运作； 2、对后厨出品进行全面管理，严格把关原料验收、储存、加工、出品制作环节，保证菜品的品质稳定性； 3、全面负责宴会和零点菜系的烹调工作； 4、亲自收集客户对食品质量的意见，不断研制、创制新菜式，推出时令菜式； 5、合理使用材料、能源，控制成本，杜绝浪费； 6、负责检查和指导人员卫生、环境卫生、食品卫生，保证后厨整体环境的清洁； 任职要求： 1、具有2-3年以酒店行业同岗位经验； 2、具有较强的协调能力；具有强烈的责任心、勇于开拓和创新； 4、拥有较高的烹饪技术，了解和熟悉食品材料的产地、规格、质量、一般进货价； 5、具备丰富的餐饮管理经验，对于服务流程、产品品质、成本管控、员工管理等拥有实际操作经验； 6、有在连锁中式快餐从事技术等厨房工作验者优先。
