PURPOSE OF POSITION 职位作用
To do whatever it takes toprovide exceptional service for our customers and to strive for excellence toachieve customer satisfaction. Responsible for the efficient operation ofall culinary , includingall Kitchen food preparationareas, dry and wet garbage rooms and the cleanliness of the loading bay.

KEY ROLES & RESPONSIBILITIES主要任务&责任
Major Responsibilities:主要责任
1. Directly responsible for the Sanitation of all Culinary & Heart of House operational areas.
直接负责厨房,后区的卫生。
2. Maintain China, Glass & Silver inventory, labour & suppliescosts within Budgeted guidelines.
在预算范围内,掌握瓷器、玻璃及银制器皿的数量,人工成本及其他物品的成本。
3. Maintain clean & sanitized food preparation areas including allproduction equipment.
保证食物加工场地的清洁卫生,包括所有的设备在内。
4. Ensure theproper cleaning & storage of all dishes & serving equipment.
确保所有器皿和上菜设备的清洁和存放。
5. Ensure forthe supervision of all trash removal to be dispose in garbage rooms.
负责监督所有的垃圾都被及时送往垃圾房。
6. Ensure for maintaining the cleanlinessof floor, wall, ceiling and exhaust hoods for all food preparation areas.
确保食品加工场地地面、墙壁、天花板及抽风机的清洁。
7. Responsible for the weekly cleaning & dish room supplies order.
负责每周大清洁和补充用品。
8. Maintain China and silver level accordance with guidelines set by Executive Chef. Participate in monthly and quarterly ChinaInventory.
跟据行政总厨制订的数据保持瓷器和银器库存数量,参加每月和每季度的盘点。
9. According to hotel’s Sanitation standard Checklist by having all Kitchens inspected on a monthly basis.
根据酒店卫生标准,每月为厨房做卫生检查。
10. Constantlyspot-check equipment for sanitation, safety and proper working condition.
经常检查设备的卫生、安全和工作状况。
11. Attend BEO and other related meeting, asappropriate.
参加有关BEO及与其相关的会议。
12. Ensure daily Sanitation inspections are made andfollow –up
确保每天的卫生检查并对相关事项进行跟进。
13. Accurately forecast business demands on a weekly basis to ensureefficient staffing.
根据工作需要有效的安置员工。

1. Ensure that you report to work on timeas per culinary department schedules

2. Ensure the efficient scheduling of management &associates.
确保有效的安排所有人员的排班表。
3. Ensure for maintaining outlet safety and sanitationstandards at all times.
确保维护部门的安全和卫生随时达到标准。
4. According to hotel’s sanitation standard checklist by having all outlets inspected on a monthlybasis.
执行酒店卫生标准,每月以该标准对部门进行检查。
5. Ensure for asset management of all outlet property &facilities.
负责部门固定资产的管理。
6. Conduct a preventative maintenance inspection on a monthlybasis.
做好每月预防性的检查工作。
7. Promote positiveinter-departmental relations through candid communication and cooperation.
通过坦率的交流和协作促进部门内部的关系。
8. Enforce operational Standards that are periodicallyreviewed & updated.
确保运营标准周期性的回顾和更新。
Training/Development培训/ 发展
1. Able to demonstrate a professionalattitude when dealing with all colleagues and train them to consistently adhereto the quality standards of the culinary department at all times.
在处理所有同事日常工作和培训时总是展现出专业的态度并坚持质量标准。
2. Ensure safe and proper use ofequipment at all times and to instruct this to all culinary colleagues
指导所有的管事部同事时刻安全、合理使用设备。
3. Ensure staff adhere to hotelregulations re: fire, safety and emergency procedures
确保员工遵循酒店的规章制度它们是:消防,安全和紧急事件程序。
4. Ensure maintain the overall welfare ofour Associates by providing them with the training and resources to take careof our guests.

Grooming 整洁
1. Ensure a clean, professionalappearance according to hotel’s grooming standards

2. Maintain high standards of appearanceand good personal hygiene.Beaware of and adhere to company policies and statutory requirements with regardsto health and safety, sanitation, and fire procedures
维持高标准的外观和良好的个人卫生,对于健康和安全,卫生,消防程序注意并遵守公司政策和法规的要求。
3. Maintain ahigh standard of cleanliness and sanitation in and around all culinary work areas .and ensure that all colleagues clean their stations after everyservice.
确保员工保持高标准的清洁和卫生设施和在所有的工作区域。并确保所有同事工作

1. Able to demonstrate a positiveattitude and take pride in one’s work. This must be reflected in the product produced for our guests toconsume.

daily/weeklyroutine but within the overall scope of the position.
