Responsibilities: • Prepare and serve a selection of wines, cocktails and spirits as per the established Four Seasons Standards. • Confirm guest orders including any special needs or requests from the restaurant server using the hotel’s point-of-sales system; check completed orders with the guest’s original order. • Service and take orders for wines, cocktails and spirits from guests as per the request from any restaurants. • Anticipate guest needs, ascertain satisfaction, and offer suggestions, and respond urgently and appropriately to guest concerns and requests. • Properly and accurately close guest checks; process cash and credit card payments; properly settle voided checks or complimentary items. • Is responsible for the monthly or weekly beverage inventory. • Is responsible to maintain the beverage cost by as per the set standards of the Four Seasons. Controls spillage, spoilage, overpour or undercharging the guests. • Maintains the spoilage report of beverages. • Checks storage and temperature of all liquor storerooms of all restaurants. • Follow up with assistance of finance for all liquor contracts and tracks the rebate amount. • Creates a profitable liquor program and banquet cocktail program. • Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact. • Work harmoniously and professionally with co-workers and supervisors. • Takes trainings for liquor program for team members and creates liquor/beverage champions in all restaurants. • Is able to work independently and strives for excellence in cocktail presentation and preparation. NON-ESSENTIAL FUNCTIONS: • Assist with liquor inventory. KNOWLEDGE AND SKILLS: Education: Two to five years of bar, food and beverage, or equivalent experience is required. Certified by international cocktail program. Extensive knowledge of classic cocktails is a must. Experience: Minimum three years as Head Bartender work.
