岗位职责 1. 开餐前做好全面的卫生工作，认真做好自己所负责区域的卫生工作，保证提供优雅干净的卫生环境； 2. 服从工作安排，按照工作程序与标准做好各项开餐准备工作； 3. 上班时集中精力，不准交头接耳，闲聊； 4. 爱护各餐具、设备物品，做好日常维护保养，及时做好物品损耗工作； 5. 保证开餐结束后的整洁卫生，达到下一次的开餐要求，做好收尾工作 6. 自觉遵守公司及部门的各项规章制度； 7. 完成上级交办的其他工作。 岗位要求 1. 有工作责任心 2. 身体健康 3. 中技以上文化程度

1、按照计划安排切配领料。能识别原料质量，变质、劣质原料拒不使用。 2、按照宴会酒会单，按照菜肴规格要求、数量、主副料搭配比例进行切配。 3、能掌握一般原料的特性，根据不同原料的不同特性，运用各种刀法：平刀法、斜刀法、混合刀法。 4、熟悉一般宴会和菜单的要求，熟练掌握直切、推切、锯切、滚 料切、直劈、跟刀劈、斩排、平批、拉批、正批、反批等。将原料加 工成丁、丝、条、片、块、粒、末、泥、茸、球等形状。 5、掌握常用原料的上浆。 6、贯彻执行食品卫生法，保持工作区域的整洁卫生及食品原料的卫生。

1按照既定的工作流程与操作标准，做好每日自助餐、大堂吧西餐热菜的烹饪与出品。 2按照既定的工作流程与操作标准，做好西餐零点热菜的烹饪与出品。 3协助直属领导做好原材料的申领与验货工作，保证日常运营。 4 严格遵守国家食品卫生法规进行厨房操作，并做好个人卫生。 5 做好设备设施的维保，安全操作，防止事故发生。 6 严格执行消防操作规程，做好防火安全工作。
