岗位要求:1、具备资深国际品牌酒店或米其林餐饮厨房的工作经验;2、具备资深意大利厨房管理工作经验;3、具备资深厨房食品及卫生管理经验,确保其符合法律法规及集团标准;4、具备资深管理厨房团队、发展和培训人才经验;岗位描述:1、负责管理意大利厨房菜品研发、创新和创收;2、负责管理意大利厨房人员、设施设备维护及食品卫生安全;3、负责管理意大利厨房其他相关工作。JOB OVERVIEW: The Chef de Cuisine is responsible for production of the highest quality products, supervising the staff in efficient manner, keeping overtime to a minimum, maintaining hygiene and safety standard and motivating the staff in creative thinking.1、Inspect and ensure that all operating equipment is maintained in good working conditions and raise repair and maintenance request when necessary.2、Ensure that the workstations are clean and hygiene and the proper safety procedures are observed by cooks at all times.3、Ensure adequate staffing for functions to ensure smooth operations. Approve weekly staff rosters prepared by subordinates and advice supervisor on recruitment and promotion of subordinates when appropriate.4、Prepare recipes of new items for costing and verify cost analysis of each dish.5、Prepare monthly duty roster and manage Public Holiday and Annual Leave.6、Prepare daily market list after receiving the requisition orders from each section of the kitchen.7、Supervise the monthly stock taking activities.8、Liaise with the Stewarding section to arrange schedule of cleaning and pest control.9、Assist supervisor in preparing operating budgets.10、Perform any other related duties as and when assigned by Excutive Chef.
