工作职责/职位描述:
实施检查标准料单及原料加工程序, 厨房运营, 出品份量及独特口味得以有效调控。监督食品申请与调拨以确保库存运转良好。
及时汇报运营问题, 及时汇报并跟进设备用具的维护状况,及时报损及跟进维护和维修。
全面负责指定厨房食品成本, 供货资源, 能源成本, 厨具养护。
积极寻求提高厨房运因效率, 以提高客户满意度。
有计划地制定菜单并及时落实。依据市场动向及时推出新菜品,坚持不懈地提高厨房运营效率。
岗位要求:
不少于10年的5星级酒店或高级餐厅同等职位的厨师工作经验。
注重工作成效,拥有良好的人际关系处理技巧。
具备艺术鉴赏力,对细节的洞察力,对品味和陈列出的作品有很高的追求。
具备主动进取的团队精神。
拥有强烈的责任感和事业心。
拥有经认可的烹饪学院大专文凭以上。

Introduction:
We are looking for Sous Chef(Dim Sum) and Commis at Sense, Cantonese Dining.
Located on the 37th floor with exceptional views of Tokyo including Tokyo
Skytree, Sense Cantonese Dining offers authentic Cantonese cuisine of the
highest quality at all times under advocacy of Chef de Cuisine. In addition to
our à la carte menu, on weekends and public holidays we also serve a popular
Dim Sum menu using Japanese seasonal ingredients, created meticulously by our
Dim Sum Chef.
Duties
and Supporting Responsibilities:
Check
standard recipes and food preparations, ensuring proper portion control,
uniformity of taste and quality. Monitor daily food requisitions and kitchens
transfers in order to achieve the stock rotation desired.
Report
problems, failures of machines or small equipment and follow up on it
Be
responsible and accountable for the assigned section’s food cost as well as
kitchen supplies, kitchen energy costs and kitchen utensils.
Find
ways to improve the efficiency of the operations, which will benefit our
clients.
Create
and develop new dishes and recipes by keeping up with the latest market trends.
Constantly strive to improve kitchen operating procedures.
Job
Requested:
At
least 10 years working experience in 5 star hotel or high profile restaurant in
similar capacity.
Result

Artistic
flair, eye for details, taste and presentation.

College
degree/diploma or above from an accredited culinary institution.
