【岗位职责】 1、负责冷菜间的日常菜品制作，包括冷盘、凉菜、刺身等各类冷食的准备与出品 2、根据菜单要求，独立完成冷菜原料的挑选、清洗、切配、腌制及装盘工作 3、严格执行食品安全标准，确保冷菜制作过程的卫生与安全 4、定期研发新式冷菜，优化现有菜品口味与摆盘设计 5、合理控制冷菜原料成本，减少浪费 6、维护冷菜间设备设施，保持工作区域整洁有序 【岗位要求】 1、高中及以上学历，持有厨师资格证者优先 2、1年以上酒店或餐饮行业冷菜制作经验，熟悉各类冷菜工艺 3、掌握冷菜原料特性，具备扎实的刀工和摆盘技巧 4、了解食品安全法规及卫生操作规范 5、年龄20-45岁，身体健康，能适应倒班工作制 6、具备创新意识，对菜品口味和造型有独特见解

1.遵守饭店和部门的各项规章制度、政策和操作规程。 2.检查炉灶、排风等设备的运行情况。 3.监督和指导下属员工的出品制作。 4.正确使用各种设备、用具和用品。 5.正确使用各种原料、材料。 6.按程序、分工处理、加工、烹制半成品。 7.按分工加工制作各种烹调用的汁酱。 8.检查每道菜的材料，保证出品符合要求。 9.按客人点单进行菜式的烹制、装饰、摆设。 10.及时安排补充各种餐具、用品用具。 11.每晚安排对炉灶、排风设备进行清洗。 12.监督和指导厨工、实习生的工作。 13.检查厨房热厨岗位的清洁卫生。 14.参与员工实务工作培训。 15.协助其它岗位的工作。 16.完成上级的分派的其它工作。

1.严格按程序制作，认真检验成品，确保饭菜质量，并与员工餐厅主管研究完善新的菜品以满足员工不同口味的要求。 2.控制成本，协助员工餐厅主管做好盘点工作。  3.严把食品卫生关，认真检查加工原料，坚持标准，不用腐烂变质原料。 4.检查餐前所需各种器皿、餐具是否洁净卫生。  5.负责厨房、餐厅卫生工作，以及落实各项餐饮卫生标准。 6.保证工作期间的仪容仪表、出勤情况。 7..抓好设备保养工作，使设备处于完好状态。 8.开餐结束要及时清理前台和厨房的卫生，将剩余食品及时保存好，并及时登记汇报给员工餐厅主管. 9.做好安全工作，每餐检查各种厨具，设备照明、餐桌椅是否完好，如发现异常立即报修，并写好交班日记。 10.协助员工餐厅主管做好员工各类培训工作。
