1.运营管理 1）根据酒店的规章制度建立本部的规章制度；确保各个餐厅和酒吧所提供的服务始终如一地符合酒店的标准； 2）与行政总厨进行每日交流，确保所有出品按照既定标准出品；协助行政总厨制定菜单和定价，保持敏锐的市场洞察力；确保所有餐厅和酒吧出品与既定的标准保持一致性； 3）确保严格实施莱华酒店的食品安全管理系统程序，包括所有餐厅和酒吧的清洁、与食品服务有关的人员的个人卫生和每月卫生审计；每日视察餐饮部的各个营业区域和后勤区域；及时发现所存在的问题，并采取正确的行动； 4）提高知名度，保持餐饮部较高的声誉；根据预算，开展推广及餐饮销售活动；关注顾客意见调查表，并解决顾客意见所提出的相关问题； 5）参加行政管理委员会会议，利润和亏损分析会议，以及餐饮部交流/战略研讨会；举行部门每日例会，内容包括：有关酒店和各部门的重要信息；当日的客人反馈意见；宴会部当日的活动安排； 6）负责对餐饮成本进行分析，使其维持在预算和预测之内，建议/制定衡量措施，将偏差控制在±5%； 7）监控每月餐饮存货以及周转率；并对每月的采购订单和货物领用申请保持适当的控制，确保采购、收货和库房存储等工作的高效率，所购货物符合酒店的要求； 8）每月与财务总监/驻店经理/总经理共同检查和分析营业损益情况；每月驻店经理/总经理提交每个月的餐饮消费预计人数和平均消费金额报告；向管理层提供有关客人满意度信息及竞争活动，并负责每月餐饮部的报告；完成上级交代的其它工作。 2. 员工管理 1）关注员工培训和员工发展规划，观察并记录员工的工作表现，激发员工去达到工作目标； 2）根据预测收入，制定员工编制； 3）负责部门团队建设。 3. 消防责任 作为餐饮部消防、安全的负责人，要熟悉酒店的安全、救护、消防及紧急情况的程序，并能安全正确的使用各种设备; 及时采取措施补救危险的情况并汇报潜在的危险;并根据酒店要求记录安全事故及意外事故。
