一、职位概述 作为雅高集团美憬阁品牌标准下的饼房领班，需在饼房厨师长的领导下，严格遵循酒店甜品出品标准与操作流程，负责冷热甜品制作、宴会茶歇及中西式宴会甜品菜单落地执行，同时协助统筹原材料管理，严守食品卫生安全规范及HACCP体系要求，监督指导下属员工开展日常工作，通过精致稳定的甜品品质、灵活的宾客需求响应能力，助力提升宾客用餐体验，保障饼房日常运营高效有序推进。 二、主要关键工作事项 1. 依照标准流程、配方卡、出品样图及上级指示，精准完成各类冷热甜品的制作与烹饪。 2. 协助饼房厨师长开展西点厨师培训，参与新品研发及出品全流程质量管控。 3. 保障饼房各区域正常运作，根据工作安排完成各品类甜品的筹备制作任务。 4. 监督管理所属区域厨师及学徒的日常工作，合理分配任务并检查执行情况。 5. 协助提升下属员工专业技能，为其职业成长提供必要的指导与支持。 6. 参与甜品质量、口感、摆盘装饰等环节的验收，确保出品符合品牌标准。 7. 结合酒店入住率预测，组织开展甜品备货与出品准备工作。 8. 探索甜品制作工艺与装饰创意，提出优化方案以提升出品竞争力。 9. 协助更新烹饪操作指南，确保操作标准的规范性与时效性。 10. 负责对接相关部门传递工作信息，保障跨部门协作顺畅。 11. 根据业务量协助排班，确保人力配置满足日常及高峰期运营需求。 12. 严格执行FSMS及HACCP标准，维护饼房及冷藏库的卫生达标。 13. 协助检查饼房设备设施的完好性，保障部门日常运转不受影响。 14. 主动与宾客沟通，及时响应并妥善处理宾客的特殊甜品需求。 15. 定期巡查餐厅区域，收集宾客对甜品的反馈意见并上报优化。 三、知识与经验 1. 具备高中学历，且拥有正规糕点烘焙专业的学习经历，掌握扎实的甜品制作理论知识。 2. 拥有至少4-6年四、五星级酒店饼房相关工作经验，熟悉高端酒店甜品运营流程。 3. 具备基础的团队管理能力，能够有效协调下属完成工作任务。 4. 精通HACCP食品安全管理体系相关知识，能严格落实各项卫生安全规范。 5. 熟练操作Windows系统下的办公软件，可完成日常数据统计与文档处理。 6. 具备流利的中文沟通能力，掌握基础英语者优先，能满足国际化酒店的工作沟通需求。
