The Role of Director of Food and Beverage Functions as the strategic business leader of the hotel food and beverage/culinary operation, including all Food and Beverage Outlets including Lai Heen Chinese Restaurant, LIMONI Western Restaurant, FOODS All Day Dining Restaurant, The Churchill Bar, Pearl Lounge, In Room Dining, all function rooms and off-site catering. Position oversees the development and implementation of departmental strategies and ensures implementation of the brand service strategy and brand initiatives. The position ensures the food and beverage/culinary operation meets the brand’s target customer needs, ensures employee satisfaction, and focuses on growing revenues and maximizing the financial performance of the department. Develops and implements property-wide strategies that deliver products and services to meet or exceed the needs and expectations of the brand’s target customer and property employees and provides a return on investment. Key Functions Ensure the profitability, efficiency and creativity in each Food and Beverage outlets including restaurants, bars, banquet functions, outside catering events and in-room dining. Partner with PR & Marketing team to increase exposure and coverage of the Food& Beverage outlets in various local and international media and continuously drive Dining Experience Reputations in the market. Have strong PR skill to push F&B Promotion. Work with Quality Leader to achieve Guest Voice, Social Platforms, Forbes, BSA and LQA Audit K Goal every year. Knowledgeable in OTA, Meituan, Dianping, and all the media platforms, consistently identifies opportunities to enhance profitability and create value by challenging existing processes, fostering innovation, and driving successful promotional strategies. Work closely with Executive Chef to maintain HACCP standards. Plan menus, prices and promotional events for all Food & Beverage outlets in order to maximize revenue generating opportunities. Identify areas for improvement in service and food & beverage quality by reviewing various service quality audit reports, guest feedback from various channels as well as guest incident reports, and formulate action plans. Stay attentive to market trends in culinary arts, beverages and service style in order to induce creativity in the operation; Manage Food & Beverage outlets concept changes and renovations as well as the annual CAPEX handling. Maintain a team of well-trained and motivated colleagues in order to deliver a high level of service according to Group’s and international luxury hotel standards. Meet and greet all VIPs and influential clients and ensure there is follow-up on all discussed details. Be part of the Guidance Team and provide advice and support in decisions and projects relating to the entire hotel. Work closely with all related departments within the hotel to maximize collaboration and efficiency. To be aware of and comply with all F&B license related matters. To report any defects in the building or equipment according to the Hotel procedures. To ensure any related accidents to colleagues, guests or visitors are reported in accordance with hotel procedures. Provide support to Human Resources in selecting, training and developing the best Ladies and Gentlemen. Build effective teams, and provide comprehensive development and succession plans for the division. Introduce effective training program across the division. Assures that financial goals of the division and the hotel are being met. Monitors and controls labor expense, and other divisional expenses such as food, beverage supplies and equipment. Works closely with Culinary, S&M and Finance to maximize F&B revenue. Assists in preparing business forecasts. Prepares Annual Budget for the division. Deliver Value Perception, Conduct monthly sales analysis via menu engineering; execute on beverage markup pricing strategy. Develop Diversified F&B Retail Products. Drive Digital Performance. Invest on Modern Marketing, Create storytelling content creation for social and digital use; drive Loyalty Performance. Implement R&B loyalty program. Education and Experience High Diploma or Degree holder in Hospitality Management. Minimum10 years’ relevant working experience in a 300 to 400 room size luxury hotel with at least 5 years in similar capacity in China. Beverage upsells skill is mandatory. Minimum 10 years of age to serve alcohol beverages. Senior leader with broad experience in Chinese Restaurant, All Day Dining and Banquet Event. Open to both Chinese and foreigner willing to accept a local compensation package. Knowledgeable of Food & Beverage in All Day Dining, Fine dining, Chinese restaurant and Conference & Banqueting operations and skills.     The ADD sous chef is responsible for production of the highest quality products, supervising the staff in efficient manner, keeping overtime to a minimum, maintaining hygiene and safetystandard and motivating the staff in creative thinking. 1)      Supervise the preparation and production of all hotor cold food items for buffet and a la carte menu to ensure that they are incompliance with the prescribed recipes and specifications 2)      Understand the basic philosophy of the company andimplement the Gold Standards, three Steps of Service and the 12 service valuesin his daily work. 3)      Determine the require mise-en-place according tothe menu orders. 4)      Check the store requisitions prepared bysubordinates. Ensure that the received products meet the predetermined qualityand purchasing specifications. 5)      Monitor the supply of food items and review wastagefor appropriate adjustment in future preparation. 6)      Ensure the proper handling and storage of food soas to keep spoilage to a minimum. 7)      Ensure that the workstations are clean and hygieneand prepare safety procedures are observed by the cooks at all times. 8)      Ensure that all operating equipment is in goodworking conditions and advise supervisor to raise repair and maintenancerequest when necessary.

    The Marketing and Communications Manager is part of an important team that creates and executes property-level communications to our customers. Under the leadership of the Director of Marketing and Communication, this role promotes on-brand messaging to customers through traditional, digital, and social media channels all with the goal of enhancing the image of the hotel. This role helps build direct marketing plans, targeted campaigns, and activated channels to the end of driving consumer awareness and preference, increasing market share, and building broader portfolio and brand awareness. This role focuses on showcasing Food and Beverage promotions, both to hotel guests and to local patrons. As part of the Marketing and Communication team, this role is fully connected into resources in their region; Marketing and Communication Managers liaise and build deep partnerships with their regional Marketing teams to verify all local social, and digital marketing efforts are effectively integrate with the selling efforts for the organization. This role also gets to do a little bit of everything, from balancing tradition and digital marketing and eCommerce activities to contributing to public relations (PR) activities for the hotel. Success is measured by how well they help drive the sales and revenue strategy of the property, social media engagement and by how effectively leveraged the resources around them are to create truly compelling marketing and communications campaigns. Duties & Responsibilities: Design -       Follow up all collateral printings including brochures, fact sheet etc. -       Follow up Hotel E-advertising & hotel promotional E-brochure, flyer design. -       Constant update on hotel email footer. -       Follow up hotel giveaway designs. -       Participates in the preparation of marketing strategic plans. -       Accesses sales and marketing data. -       Takes ownership by developing, executing and following up on the hotel's public relations and advertising schedules. Photo taking -     In charge of photo takings for activities, VIP arrivals and simple cuisine photos. -     Follow up on site photo shooting with professional photographer. -     Follow up with any third-party on-site photo or video shooting. Online marketing -       Keep all the correct information updated on hotel social media platforms including processing copywriting and photo. -       Follow up advertisings and selling with online companies including update hotel information, special offer package and marketing cooperation activities. -       Work with MI to follow up on any search engine related jobs. Other tasks -       Maintain hotel database (media & combine database from F&B and rooms). -       Maintain hotel media kits and keep photo library organized. -       Minutes for weekly departmental meeting. -       Assist in composing press releases and translations. -       Assist in any PR activities. -       Assist any other tasks directed by direct manager. Required: 4-year bachelor’s degree in marketing, Public Relations Business, or related major; 2 years’ experience in the sales, marketing, digital or related professional area, hospitality marketing or digital advertising agency experience preferred. Additional Skill required: -       Fluent in both Chinese and English, with excellent written and verbal communication skills in both languages. -       Good interpersonal & communicative skills. -       Ability to work independently and as a team.
