DUTIES AND RESPONSIBILITIES 职责和义务
1. Effectivelymanage the restaurant by ensuring the following:

· Oversee the Implementation ofstandards as detailed in the departmental standards and procedures manual.

· Adhere to bill paying procedures.

· Conduct effective shift briefingsensuring all staff are aware of VIPs, special occasions, daily specials;emphasis on up selling certain products; etc.

· Personally meet and farewell aminimum of 80% of your customers.
至少亲自接待百分之八十的客人以及与他们告别
· Encourage and motivate staff toprovide optimum service during all shifts.

2. Sharerecommendations and guest comments to Chef and Food and Beverage Director toreflect current customer profile.

3. Developand implement Promotions Calendar for F&B products in restaurant.

4. Manage special event concepts.

5. Anticipate market changesand review operations when necessary.

6. Conduct competitoranalysis.

15. Analyzefood and beverage statistics through point of sale system

16. Forconferring daily with supervisory staff and management on any operationalproblems. Conducting inspection tours of the operation to ensure propercleanliness, manning and placement for daily business.

17. Mustmaintain effective discipline over the department, ensuring that allDepartmental rules and regulations are adhered to. And that all grooming andhygiene standards are maintained. Taking disciplinaryaction wherever required to enforce this.

18.Toassign and delegate responsibilities and authority for the operation areaswithin the department to the Supervisors. Developing the position within asuitable time frame (to be discussed) so that they may be able to carry out theduties and responsibilities of the Chinese Restaurant Manager.

19. Tomaintain effective communication on the activities of the department with theF&B Office and other areas of the Hotel, in order to provide the bestpossible service to the guests.

20. Tobe aware of trends, practices and new products available or current in theindustry, by means of monthly competitor evaluations, industry analysis andtrade literature.

21. Tomaintain a high profile within the restaurant during service periods, withemphasis on guest relations and needs.

22. Toplan and co-ordinate a guest recognition program, and implement once approvedby the F&B Director.

23. Toensure that all service and quality standards are maintained as per theoperating policy of the outlet and requirements as set by the Hotel, and tocorrect whenever required.

24. Toattend and participate in all monthly F&B Departmental Meetings and dailymorning briefings and to send replacement on scheduled days off.

25. Todo monthly maintenance checks on all equipment, furniture and fixtures andreports all areas in need of attention to the appropriate department.

26. Toensure the safety of all equipment held within the restaurant, ensuring thatall equipment is properly handled, cleaned and stored at all times. Correctingany areas which are in need of attention, so that all compliance withestablished polices is carried out.

27. Toensure that Potential breakages are avoided and that staff are aware of the Departmentalbreakage procedure. And that full compliance is received with regards tominimizing breakage.

28. To actively participate in the setup and running of any promotion held in the outlet, including planning andimplementation of such promotions.

JOB SPECIFICATION工作要求
1. College graduate, preferably inHotel and Restaurant Manager or equivalent in experience

2. At least 5 years’ experience inChinese restaurant,

3. Personable, with verbal facilityand fine department
