1. 后厨运营管理 ● 制定并执行后厨每日工作计划，合理安排食材采购、存储、加工等各环节流程，确保餐食按时供应。 ● 负责后厨环境卫生、设备设施的日常检查与维护，确保符合食品安全卫生标准（如食品留样、厨具消毒等）。 ● 控制后厨成本，包括食材损耗、能源消耗等，定期核算成本并优化方案。 2. 菜品与质量管控 ● 研发、更新员工餐菜单，结合季节、员工反馈调整菜品，平衡营养、口味与成本。 ● 严格把控食材质量，验收采购食材时检查新鲜度、规格，杜绝不合格食材入库。 ● 监督菜品制作过程，确保每道菜品的口味、分量、摆盘符合标准，减少员工投诉。 3. 团队管理与培训 ● 负责后厨团队（厨师、帮厨等）的招聘、排班、考勤及绩效考核，明确岗位职责。 ● 组织员工进行技能培训，包括烹饪技巧、食品安全知识、设备操作等，提升团队专业能力。 ● 协调团队内部关系，处理员工工作中的问题，营造高效协作的工作氛围。 4. 沟通与协作 ● 与餐厅前厅、采购部门对接，确保食材供应及时、前厅服务与后厨流程衔接顺畅。 ● 定期收集员工对餐食的意见与建议，及时调整菜品或服务，提升员工满意度。 ● 配合公司行政或后勤部门，完成节日餐、临时加餐等特殊餐饮需求的策划与执行。
