§ Monitors service and
Bakery and Pastry standards in all Outlets and Banquets.

§ Checks incoming
ingredients, ensuring that all merchandise is in accordance with order sheets
and receiving records.

§ Ensures correct
handling, basic maintenance of machinery and tools in the preparation kitchen.

§ Ensures orderly
handling of all raw products and checks that quantities prepared are according
to Recipes and plate specifications.

§ Prepares and supervises
daily mise en place and assures that all sections are supplied with fresh and
high quality products based on anticipated business levels.

§ Oversees displays and
all Kitchen standards in the retail outlet.

define Standard with the utmost efficiency, consistency and courtesy as
detailed in the Department Operations Manual.

ways to assist the Outlet management to maximise their revenues and profits
through Pastry and Bakery products.

the activities and trends of competitive restaurants, bars and other hotel’s
banqueting departments.
