岗位职责： 1.监督西餐热菜（煎、烤、炖、焗等）标准化制作流程； 2.确保每道菜品在口味、熟度、摆盘上符合标准（如牛排中心温度、酱汁稠度）； 3.主导新菜研发测试，参与标准食谱（Standard Recipe）制定； 4.每日检查热菜区设备（烤箱/扒炉/慢煮机）运行状态，协调冷盘、酱汁岗位保障出餐动线流畅，处理高峰期突发状况（加急单/设备故障）；  5.监控高端食材（如和牛/海鲜）使用损耗率，落实HACCP标准，确保热菜区卫生达标，每月参与厨房成本分析会； 6.严格执行标准化配方和制作流程，每日抽检产品品质（口味、新鲜度、摆盘效果）； 7.制定并实施员工技能培训计划，定期进行岗位技能考核与评估； 8.每日监控原料使用情况，分析成本数据，提出优化建议。 岗位要求： 1.中专及以上（烹饪专业优先），酒店管理，餐饮或相关专业； 2.3年以上五星酒店/高端西餐厅热菜冷菜经验，1年管理经历，特别优秀者可适当放宽； 3.精通西餐热菜冷菜全品类技艺，团队管理软实力，责任心与抗压性，职业敬畏心。
