Scope of Job:
The Chef de Cuisine will oversee all aspects of the Food Operation, designing and delivering creative, high-quality dishes that attract guests and visitors to the LLSHR and are in line with revenue and cost targets.

Work closely with Executive Chef and Sous to contribute to the Food and Beverage Strategy that supports overall hotel sales and guest satisfaction strategies for all food and beverage, meetings and banquets, and event revenue streams with empathy for the guest population (leisure/corporate/family) and brand

Ensure strict compliance with all relevant Hygiene and Safety legislation requirements and Merlin code of safe working practices through effective due diligence.

Monitor, analyse and respond to changes in commodity costs to ensure we provide high quality products to our customers while contributing to profitable LLSHR

Work closely with meeting and banquet managers to ensure all meetings and events run smoothly

3. Correspondence
Liaise and collaborate with the Executive Chef and Executive Sous Chef and the Merlin Group commercial team to share ideas, concepts and secure bigger and better deals

Communicate effectively with the wider F&B resort team as well as the Group F&B team to ensure best practices/standards and procedures are available within Merlin Entertainment.

Requires progressive years of professional-level experience in kitchens, with demonstrable experience over 5years as Chef de Cuisine(or equivalent role/job experience).

A proven track record in managing cost of sales required. Underpinning knowledge of food safety required and proven record to obtain industry standards at the highest level.

Minimum 8years of work experience in China and be familiar with local diet preference

You are responsible for implementing LLSHR’s HSS Policy, management system and related standards.
Within the area of management responsibility, you must:
Show clear leadership and commitment to HSS; this includes setting a good personal example.
Develop plans that are consistent with the HSS strategy to carry out risk assessments and meet relevant standards, legal requirements and LLSHR’s HSS targets and objectives.
Take the necessary practical steps to implement the HSS management system, including:
Providing suitable resources and training
Defining specific roles and responsibilities
Explaining HSS issues effectively
Establishing operational controls
Managing contractors effectively
Organising emergency response arrangements
Implement measures to monitor HSS performance and, where necessary, take corrective action. This includes audits, performance monitoring, and reporting / investigating incidents.
Ensure that HSS decisions are consistent with LLSHR’s HSS Policy.
Consider HSS issues in business decisions and explain their importance.
Support promotional campaigns and educational plans.
Recognise and reward employees who show positive HSS behaviour and achieve HSS objectives.
Discuss HSS issues regularly.
Encourage employees to suggest measures to improve HSS performance, and follow these up.
Ensure that employees who blatantly or repeatedly violate HSS standards, procedures and rules are disciplined appropriately.
Challenge unsafe conditions or actions and work with those involved to agree the necessary safety improvements.
Provide ready access to skilled HSS professionals and / or accurate HSS advice.
