1、负责肉类、禽类、水产品等的切片、拉丝、制陷、改花刀等细加工工作，并同时负责熟料、名贵干货的加工和原料的切配工作。 2、对已加工的各种原料按菜点烹制要求配菜，并对粗加工后的料头原料进行细加工，改成所需形状； 3、负责生、熟馅料制作、原料腌制、各种原料改刀的工作。 4、根据客人预订和点菜要求，负责贵重干货原料的涨发、拆卸、斩切和加工处理，掌握原料用量。 5、在各种原料加工过程中，严格掌握标准，检查加工质量，以保证生产需要。 6、接到客人点菜单，按“先到先配制”原则配菜；如菜点品种缺货或已售完，及时通知餐厅服务员告知客人。 7、制作中，发现食品质量不符合要求、上道工序的操作不符规定、操作设备有异常、工具或盛器不敷使用等问题时，及时向领班汇报、处理。 8、每天工作结束后，将剩余肉类、禽类、水产品等原料存入冰箱，收好料头。 9、工作结束后做好本岗的卫生清洁工作及能源的关闭。 10、完成主厨交给的其他任务。
