As the Chef de Cuisine, you will be responsible for performing the following tasks to the highest standards: -Plan, prepare and implement high quality food and beverage products, and set-ups in all areas in the restaurant. -Work seamlessly with recipes, standards and plating guides. -Maintain all HACCP aspects within the hotel operation. -Use appropriately all equipment, tools and machines. -Focus on constant improvement of training manuals and SOPs. -Participate actively in quality initiatives such as daily chef briefings and monthly team meetings in order to constantly improve the culinary operation, meet targets and keep communication flowing. -Work on offsite events when requested. -Complete tasks and jobs outside of the kitchen area. -Assist in inventory taking. -Knowledgeable of hotel’s occupancy, events, forecasts and achievements. -Prepare menus as requested, in a timely fashion. -Work on new dishes for food tastings and photo taking. -Control stations within the kitchen. -Work closely with the stewarding department to ensure high levels of cleanliness and low levels of lost and breakages. -Effectively respond to guests’ requests. -Learn and adapt to changes. -Be receptive to constructive feedback. -Purchase for and control production. -Maintain at all times a professional and positive attitude towards team members and supervisors. -Adhere to established hotel rules and team member handbook, ensuring all team members under your supervision do so as well for the department to operate smoothly. -Coordinate, organize and participate in all production pertaining to the kitchen. -Check and follow-up on the assembling of ingredients and equipment for the ala carte menu, daily menus and seasonal specials, maintaining the standards of pre-set recipes, portion control and costing at all times. -Be disciplined and adhere to proper work practices at all times for yourself and team members assigned to you. -Maintain good personal hygiene, clean uniforms, proper sanitation and cleanliness of the workstations and work tools. -Be aware of the dangers of contaminated food and ensure ingredients in the refrigerators are checked and replaced appropriately. -Report to the Executive Chef on any issues and take appropriate action. -Follow-up on changes in new recipes or work methods pertaining to new menus, daily specials, and promotional activities as instructed by the Executive Sous Chef. -Work closely with the Executive Sous Chef in determining the quantity of food items and ingredients to be produced, bought or prepared for that day. -Exercise maximum control on wastage to achieve optimum profitability. -Check all equipment belonging to the department and make sure that all are in good working order, and if necessary, report faults or problems to the Executive Sous Chef. -Prepare the necessary work orders for the Engineering department. -Ensure that recipes and costings are established and updated. -Monitor food quality and quantity to ensure the most economical usage of ingredients. -Check that the quality of food prepared by team members meet the required standard and make necessary adjustments. -Select team members who display qualities and attributes that reflect department standards. -Manage the training function and ensure all team members are certified in their position before taking charge of an area of responsibility. -Monitor overall food operation and ensure that food items are being prepared in a timely and correct manner. -Oversee the cleanliness, hygiene and maintenance of the kitchen and undertake steps necessary to maintain the highest possible standards in this area. -Control, monitor and be responsible for food costs to yield the maximum amount of outlet profit and maximum guest satisfaction. -Review all timesheets to ensure that team members’ work times and meal breaks are accurate. -Understand, practice and promote teamwork to achieve missions, goals, and overall departmental standards. -Ensure that team members have a complete understanding of and adhere to the hotel’s team member rules and regulations. -Train team members on the correct usage of all equipment, tools and machines. -The Management reserves the right to make changes to this job description at its sole discretion and without advance notice. -Carry out any other reasonable duties and responsibilities as assigned. 【任职要求】 What are we looking for? The Food & Beverage Manager has the key responsibility of ensuring that all Food & Beverage outlets, Conference and Banqueting operations are managed as successful independent profit centers, ensuring maximum guest satisfaction and consistency in line with Hilton International standards. This role will achieve these through the key strategies of planning, controlling, organizing and marketing. What will I be doing? As the Food & Beverage Manager, you will be responsible for performing the following tasks to the highest standards: • Ensure that each food and beverage outlet and conference and banqueting event is managed in line with key service standards and specified profit margins as an independent profit centre. • Ensure that each outlet is managed by a management team (Restaurant Manager / Head Chef) who are totally accountable for the profitability and service standards achieved. • Coordinate the formulation of the annual operating budget in determining outlet projected revenues and expenses, manning, operating equipment and FF&E requirements in line with the annual business plans, supported by key marketing plans as well as revenue driven initiatives. • Provide accurate and realistic forecasts and updates on anticipated changes in the business whenever appropriate. • Ensure that supplier liaison with the Purchasing Officer ensures maximum support with regards to sponsorship, marketing and pricing initiatives. • Monitor all costs and recommend measures to control them. • Ensure that the department operational budget is strictly adhered to. • Ensure that all outlets and banquets are managed efficiently according to the established concept statements. • Closely monitor productivity levels through productivity schedules in each outlet and take immediate corrective action if necessary. • Monitor and control vacation planning for the department. • Monitor, control and minimize overtime for the department. • Ensure that the minimum operating standards are adhered to in order to achieve the level of service established in the departmental operations manual. • Maintain and amend where appropriate all SOPs in line with company brand standards and outlet requirements. • Work with the Outlet Managers, Banquet Service Managers and all respective Chef de Cuisines to take corrective action where necessary. • Handle all guest complaints, requests and enquiries on food, beverages and services, adhering to established and clearly defined procedures and protocols. • Take personal responsibility for maintaining and revising the policies and procedures manual associated with the department and inter dependent departments to ensure no ambiguity. • Establish a rapport with guests. maintaining good customer relationship. • Coordinate the formulation of the annual marketing plan to establish a list of marketing activities in line with the annual business plan, supported by appropriate advertising and promotion budgets from suppliers. • Ensure that all Food & Beverage forms and reports are completed and forwarded to the relevant office in a professional and timely manner. • Conduct monthly departmental meetings and daily operations briefings with Outlet Managers. • Maintain good working relationships with colleagues and all other departments. • Have complete understanding of the team member handbook and ensure that team members adhere to the regulations contained within. • Train and develop Outlet Managers so that they are able to operate independently within their own profit centres. • Ensure that each Outlet Manager plans and implements effective training programs for their team members with the Training Manager and Departmental Trainers. • Develop F&B marketing activities and promotions in close cooperation with Outlet Managers, the Executive Chef and the Marketing Communications Manager. • Conduct annual PDR for direct reports and ensure process is followed through by all Outlet Managers. • Ensure that all team members report for duty punctually wearing the correct uniform and name badge at all times. • Have a complete understanding of and adhere to the hotel’s policy relating to Fire, Hygiene, Health and Safety. • Be the key person in driving the hotel’s Food Safety Management System (FSMS). • Ensure that one of the key responsibilities of all direct reports is to focus on the 9 high risk policies as well as to give Health and Safety compliance top priority. • Ensure that full compliance is maintained in all aspects of Health and Safety within the hotel and any identified shortfalls are addressed with due priority. • Assist in the building of an efficient team of team members by taking an active interest in their welfare, safety and development. • Ensure that all team members provide courteous     岗位职责 1、制定工程部的组织机构和管理运行模式,使其操作快捷合理。 2、总结归纳运行和维修、制定和审定设备设施及建筑装潢的预防性维修计划、 3、负责工程部的节支运行、跟踪,控制水、电、油、等的消耗并严格控制维修费用。 4、根据营业情况和气候及市场能源价格情况,提出节能运行的计划和运行维修费用预算。 5、负责协调和酒店相关的市政工程等业务部门的关系,以获得良好的外部环境。 6、审定员工培训计划,定期对员工进行业务技能、服务意识、基本素质的培训。 岗位要求 1、大专以上文化程度;8年以上同岗位工作经验。有一定外语水平。 2、必须掌握机电工程设计基础知识、熟悉电子通讯设备、计算机、暖通、空调、给排水设备、电梯等的使用和维护管理,熟悉基建、环境保护、安全生产、劳动保护方面的政策与法规。 3、能充分领会总经理的经营意图,正确处理上下级之间、部门之间的关系,并能组织指挥工程部各项工作计划的实施,确保工程部的正常运转。 4、有强烈的事业心责任感,有较强的自学能力和适应性。 5、有上海国际五星级酒店同岗位工作经验的优先考虑。

The Marketing Communications Manager is responsible to develop, implement, monitor and evaluate the hotel’s marketing communications strategy, including advertising, promotions, public relations, graphics and collateral, so as to support the marketing objectives for the hotel and maximise the hotel’s positive exposure in local, national and international markets. Ideally with a university degree or diploma in Communications. Minimum 2 years work experience as Communications Manager or Assistant Marketing Communications Manager. Good problem solving, writing, administrative and PR skills are a must.

    JOB OVERVIEW    Acting as the key consultant to assigned franchised Wyndham Hotels & Resorts properties within the region. Establish, support and maintain relationships with the existing and new key stakeholders in the assigned hotels (hotel GM / department heads and respective owners) and the respective internal departments to add true business value in respect to both the WHR Corporate and the operating business of the Hotel. Using the professional knowledge to make sure the hotel operations align with WHR standards as well as maximize the brand value for the hotel owners.    KEY RESPONSIBILITIES    Work with the owner and other stakeholders to ensure an engaged opening. This process to be started as soon as the project is handed-over from Opening team.   Ensure that all required standards are met to be a Wyndham branded hotel and associates are adequately trained for the hotel to join the Wyndham family before the opening dates are finalized.    Work with internal departments to provide consultation on all aspects of the hotel operation including marketing, human resources, engineering, and food & beverage as well as general operations and aiding in strategic decision making.  Implement revenue management tools to increase ROI for owners and hotels and add value to the different brands.  Improve accounts receivables performances within the region.  Retain the properties with possibilities to quit Wyndham system.  Make sure hotels are opened & operated with WHR standard.  Conduct site inspection to operating hotels and make sure QA standard is closely followed in the hotels.  Develop & maintain strong relationships with Hotel Owners, General Managers and key relevant Department Heads as well as internal associates.  Support on hotel onsite trainings and WHR regional training programs whenever needed.  Provide general guidance and review on hotel system contribution whenever necessary.  Carry out duties/projects as assigned by line manager from time to time.    QUALIFICATIONS & REQUIREMENTS    At least 8 years and above hotel operational experience is required, Sales & Marketing background would be a plus.  College degree, preferably in Hotel Management  Goals oriented & result driven, proven record of successfully running a hotel is a must.  Good communication in both Chinese & English (orally & written)  Presentable, positive, confident and self reliant  Good influencer and advisor to both external hotel owners and internal associates.  Understand the hotel business and operational concepts and can apply these to create and drive profitability and growth.  Able to undertake travel both within the region and internationally up to 50% of the time   Previous exposure to the complexities of franchising would prove beneficial   Great computer knowledge (Excel, PPT etc.)
